This is a deep and brooding Cabernet Sauvignon with a dark ‘black cherry’ hue. The aroma is rich with cigar spice and chocolate. Powerful blackcurrant fruit carries through the long palate underpinned with unmistakably high-quality tannins, typical of this Cabernet in the Clare Valley.
Cabernet Sauvignon is regarded by many as the Clare Valley’s best red variety. The 2009 Inigo Cabernet Sauvignon is made from fruit that comes from a vineyard with a gentle north-facing slope directly behind Sevenhill’s St Aloysius’ Church. The vineyard’s soil is predominantly red to brown loam over weathering slate or siltstone, with its well-drained character contributing to naturally consistent low cropping levels and fruit of great integrity.
