Right up there with our very best Cabernets, this wine is drinking superbly. John’s wealth of experience and Belinda’s deft hand have combined to produce a well structured and finely crafted wine with style and finesse. The restrained, delicately perfumed nose shows rich cedar coupled with tobacco leaf and generous overtones of blackcurrants and mulberries. Finely integrated French
oak provides elegant structure and a firm backbone to the palate, together with our vineyard’s hallmark minerality. Lingering bitter chocolate notes combine with savoury nuances and fine, powdery tannins to produce a wine with finesse and balance – a stylish expression of the variety.
The fruit for this wine is hand-picked and de-stemmed before being fermented in small parcels with the must left to cold soak. The wine is hand plunged and fermented at moderate temperatures. Post fermentation, a proportion of the wine is given extended maceration in small sealed vats, before being gently pressed and aged in a variety of new and old French oak barriques for around 24 months.
